The Zucc’s Barbeque Baker allows you to bake or smoke simply using your outdoor barbeque. Foods cook evenly and the flavor is enhanced and meats stay juicy when you use your new Zucc’s Barbeque Baker. And Best Of ALL , NO TURNING , NO BURNING cooking. You can do other things while the food Cooks to perfection.

Baking Instructions:

  • Preheat your barbeque to its highest temperature using all the burners until very hot.
  • Place your Zuccs barbeque baker in your barbeque once preheated.
  • Place your food on the baking tray or directly on the grill rack provided.  Place the tray or grill rack on the main body of the barbeque baker and close the barbeques cover.  Note that for items such as lasagna or cakes etc. you can place your own baking pan directly on the barbeque baker by placing it on top of the grill rack. The grill rack is not necessary when using the baking tray.
  • Adjust the barbeques heat level for the item you are baking.  Leave all the bottom burners on at the preferred level once preheated.  Do not use side burners.

Smoking Instructions:

  • Place 2 small pieces of wet  wood chips on the louver plate ( baker unit bottom) .
  • Follow steps 1 and 2 above. Continue to preheat until the wet wood chips begin to smoke.
  • Place your fish or meat directly on the baker‘s grill attachment and close the barbeques cover.
  • Adjust all the barbeques bottom burners to med,med-high for fish and med,med-low for meats. Do not use side burners.

Note that the recommended heat setting may vary by barbeque and outdoor temperature.  You can bake meats at your preferred temperature as  you do for your oven baking. The same goes for vegetables and Fish and desserts. Once you understand your barbeque it will be easy to set the required temperature.

*These items do not need to be pre-thawed and will cook fresh or frozen.

Cleaning Instructions:
You can  just scrape the louver plate of any buildup before using when necessary or scour in your sink with your regular cleaning powder. You Can soak your Zucc’s Barbeque Baker and grill (but not the pizza pan) in water and OXI clean overnight and wipe clean in the morning or simply apply easy off as you would your oven. If you have a self cleaning oven simply leave the ZuccsBaker in the oven while it self cleans.

Recipes: general

Smoked Salmon

Prepare barbeque baker as noted above. Rub salt, pepper, dried parsley and olive oil on salmon and place on hot grill. Add a thin lemon slice to each piece and close the cover. Check after 4 to 5 minutes to see if cooked. Extend time slightly if required.

Cake Mixes

Prepare barbeque baker as noted above for baking. Prepare cake as directed on package. Place cake pan on grill, close the cover and adjust all burners to low. Check after 15 minutes and extend baking time as required.

Pizza

Prepare barbeque baker as noted for baking. Place pizza on baking tray and place on barbeque baker, close the cover and adjust all burners to med-high. Check after 10 to15 minutes. Bottom of pizza will be golden, the cheese melted and toppings cooked when it is ready. Remove with safety handle and place on the cooling rack.

Chicken Breast or Pork Chops…too easy

Prepare barbeque baker as noted for baking. Lower to med-low. Place the chicken breast, thighs or pork chops on the grill. Check after 10 to 15 minutes and leave until cooked. (Note that I once placed half-frozen chicken thighs on the grill with just a little bit of salt and they came out great! They were golden brown and juicy. Your chicken or pork will cook wonderfully and be nice and juicy not dry!

Recipes: specific

RIBS 

 

Directions: 

  • Cut ribs in small pieces.
  • Lightly rub olive oil on ribs.
  • Olive oil can be substituted with lemon juice if you prefer
  • Season with garlic salt and pepper.

Cooking time:

  • Preheat bbq to high then leave all bottom burners on med  + or – depending on how hot the outside weather is before cooking.
  • 25-30 mins aprox cooking time required.
  • Simply remove ribs with safety handle and place on serving plate.

If smoking ribs:

  • Add a few pieces of soaked wet wood chips to the louver plate.
    Once the wood is smoldering, commence cooking.

Remember that you must get to know your bbq and adjust the heat accordingly to obtain the cooking temperature that is required.

No Turning is required of the meats being cooked, as it should bake evenly all around.

No need to pre boil the ribs.

Any store bought sauces can be added to the ribs should you decide to cook then season.  Just simply brush on a light coating of sauce on the top of the ribs about 4-6 mins before cooking is complete.

Salmon, plain or smoked 

 

Directions:  preparation

  • Cut Salmon fillet in approximately 3-inch sections. (1 piece per person)
  • In a bowl, add pieces of salmon and lightly rub pure virgin olive oil (1/2 teaspoon per section) on salmon portions.
  • Sprinkle Garlic salt lightly on salmon sections.
  • Parsley. (¼ teaspoon per section) spread evenly over salmon.
  • Season with black pepper (1 sprinkle per section)
  • Optional: add thin slice of lemon on each portion if desired.
  • Place on grill attachment with space between each section so heat can circulate while being baked on Zucc’s Bbq Baker.

Cooking instructions:

  • Place Zuccs Bbq Baker in Bbq and close lid.
  • Preheat bbq to high then lower all bottom burners to med to med high. If the outside weather is very hot lower burners. Aprox temp should be at 500 deg F to 600 deg F.
  • Place salmon on grill on ZuccsBaker in BBQ and close lid.
  • 6 to 8 mins aprox cooking time required.
  • Simply remove salmon on grill with safety handle and place on serving plate.

If smoking Salmon:

  • Add 2 pieces of soaked wet wood chips (cedar recommended) to the ZuccsBaker louver plate open flat spaces. Note: any type of wood of your choice can be used.
  • Once the wood is smoldering, commence cooking and wood flavor will infuse into the salmon as it bakes. No need to turn the salmon while it bakes.

Remember that you must get to know your bbq and adjust the heat accordingly to obtain the cooking temperature that is required.

Focaccia

 

Directions:  

  • Prepare fresh dough (can be purchased frozen or made fresh)
  • Wipe some olive oil on a smooth table surface and a rolling pin; Spread the dough thin until you get the desired shape. Lift off surface and on to the pre seasoned pizza pan and form around edges. Note: once the pan has been preseason once, it is not necessary to add any thing to the baking surface, as the pizza will not stick.
  • Let the dough sit on the pan for about 5-7 minutes before seasoning.
  • Prepare your seasoning, Mix together: Olive oil, Rosemary, Garlic, and black Pepper and salt. The mix quantities will be according to your taste.
  • With a brush, spread the seasoning evenly over the dough and edges.
  • Olives, mushrooms and small chucks of tomatoes can be added to the focaccia if desired before cooking for more variety.

Cooking time:

  • Preheat bbq to high then leave all bottom burners on med  + or – depending on how hot the outside weather is before cooking. Aprox temp (450 to 500).
  • 15-17 mins aprox cooking time required.
  • Simply remove focaccia with safety handle and place on cutting board and let sit for 5 minutes before slicing.

Remember that you must get to know your bbq and adjust the heat accordingly to obtain the cooking temperature that is required.

Vegetarian Pizza
Directions: preparation. 

  • Prepare fresh dough (can be purchased frozen or made fresh) or use flat bread.
  • Wipe olive oil on table surface and a rolling pin. Spread the dough thin until you get the desired shape. Lift off surface and on to the pre seasoned pizza pan and form around edges. Note: once the pan has been preseason once, it is not necessary to add any thing to the baking surface, as the pizza will not stick.
  • Let the dough sit on the pan for about 5-7 minutes before adding ingredients.

Ingredients:

  • Mozzarella cheese- (1 cup) adds this directly over the dough.
  • Tomatoes –(2 fresh Italian Plum Tomatoes) thin cut slices or chunks salted lightly, add this over the cheese and cover entire Pizza.
  • Black and green Olives- (1/2 cup) spread them evenly.
  • Green or Red peppers- (1/4 cup) cut in small squares and spread on top.
  • Asparagus –(1/4 cup copped) place cut pieces and spread out over top.
  • Fresh Basil- (3 leaves) fresh is best…chop thinly and apply over pizza.
  • Drizzle some olive oil lightly on top (approx 2 tablespoons).
  • Sprinkle pepper lightly over the entire pizza.

Cooking time:

  • Preheat bbq to high then lower all bottom burners to med to med high. If the outside weather is very hot lower burners. Aprox. temp should be at around (450 deg F to 550 deg F).
  • 17-20 mins aprox. cooking time required, check around the 15-minute mark.
  • When done simply remove the Vegetarian Pizza with the safety handle and place on cutting board and let sit for 5 minutes before slicing.
